How to get a really tasty meal flying coach.

(The secret is understanding your taste buds.)

Time was that you got a free hot meal on most flights of any length.

While that's long-gone on domestic flight, 'hot meal service' persists on many long-haul/international flights.

But hot doesn't necessarily mean good. Usually it's just "Hello there. Chicken or pasta?".

I'm not a super-frequent flyer, but having lived in several countries over the years I've done my share of international flights and have an excellent tip to increase the chances you'll get a tasty and carefully prepared meal, instead of the usual blander-than-bland options.

The hack?

The presentation in coach isn't this nice. But the food can be equally awesome.

Pre-order one of the diet-specific options - there's usually 8 or 9 of them to cover a variety of medical and ethnic needs.

Now here's the thing. An airplane's environment significantly dulls our taste buds. Cabin pressure and low humidity reduce our sensitivity to sweet and salty flavors by about 30%, but spicy flavors remain largely unaffected.

So the hack is to pick a meal that packs punch in terms of spice.

  • Choose a Hindu meal, for instance, and you might get 'dal makhani', its arrival heralded by an aromatic wave of butter and cardamom! Lentils and rice, with delicious naan bread, can be a revelation compared to the usual fare.

  • British Airways from New York to London often has a terrific 'bhindi masala', a spicy stir-fried okra, served with chapati and a zesty yogurt sauce - a veritable taste sensation!

  • Even United once served me a terrific hot Japanese sampler that beat the standard options cold.

So an airline meal in coach can actually be enjoyable. Who knew?

I have a trip coming up and have already pre-booked a nice mild spicy option. Bonus? So few people choose them your meal might even have a professional chef making it just for you.
